MAFTOUL (COUSCOUS) - 700g
Maftoul is a real labour of love, and if you ask any Palestinian they will be able to remember their grandmothers making this at home. We work with a women’s cooperative near Hebron who make it just like their grandmother’s would have done many years ago. They use bulgur wheat and flour and water to work together small balls through ever smaller sieves until the maftoul is complete and ready to be steamed and then dried.
Perfect for vegetarian and vegan diet.

What is Maftoul (couscous) and how is it different from regular couscous?
Maftoul, also known as Palestinian couscous, is a traditional Palestinian grain product made from wheat flour, water, and salt. It is similar to regular couscous in terms of ingredients, but the preparation method and texture set it apart.
The key difference lies in the size and preparation process. Maftoul has larger granules compared to regular couscous, and it is typically hand-rolled and sun-dried, giving it a coarser texture. This process involves coating the wheat flour with a mixture of water and salt, forming small round pellets, and then rolling them until they increase in size. Afterward, they are dried in the sun, contributing to their unique texture and flavor.
Maftoul is commonly used in Palestinian cuisine for various dishes such as stews, salads, and side dishes. Its slightly denser texture allows it to absorb flavors more effectively, making it a popular choice in hearty, flavorful recipes. Regular couscous, on the other hand, is smaller, finer, and is usually steamed rather than sun-dried.
